How to make Lazy Dog Restaurant's 'Pie Tin Nachos'
Ingredients:
- 3 T. Butter
- 1 tsp. Garlic, fresh chopped
- 3 T. Flour
- ¼ tsp. Salt
- 1/8 tsp. White pepper
- 1/8 tsp. Nutmeg
- 1/2 cup Whoa Nellie Lager
- 1 cup Water
- 1 cup Half & Half
- 1 lb American Cheese, cut into 1" chunks
- ¼ lb Cream Cheese, cut into 1" chunks
Toppings: Whoa, Nellie Mexican-Style Lager, cheese sauce, guacamole, tomatoes, pickled jalapeño, tapatío crema, queso blanco, cilantro.
Directions:
1. Over low heat add butter and garlic to a sauce pot. Cook for 2-3 minutes to soften garlic.
2. Add flour, salt, white pepper, and nutmeg and cook over low heat to create a roux. Do not brown and cook for 2-3 minutes.
3. Add beer and stir until fully combined and beer is cooked out. About 3-5 minutes.
4. Add water and Half & Half, combine well and simmer for 3-5 minutes until slightly thickened.
5. Remove from heat and stir in the cheeses until melted and fully combined and smooth.
6. Store in a double boiler if using or chill down and refrigerate for future use.
