Easy, healthy Cajun chicken and shrimp alfredo dinner recipe

Molly Winkler, Fish City Grill's new executive chef, visited the Good Day kitchen to make an easy, healthy meal for the whole family. Her chicken and shrimp alfredo can be made with or without shrimp, depending on your family's preferences.

Chicken and Shrimp Alfredo

Serves: Family of 4

Pan Seared Chicken

6 tsp Cajun Seasoning 
4 boneless, skinless chicken breasts
4 Tbsp cooking oil

Coat the chicken breasts liberally with the seasoning on all sides.

Heat a large sauté pan over medium-low. Once hot, add cooking oil and swirl the oil to coat the skillet.

Add the chicken breasts to the skillet and cook for about 8 minutes without flipping. Flip the chicken and then cook on the second side until well browned and cooked through (internal temperature of 165ºF). Can also put in the oven once flipped to finish cooking. 

Transfer the chicken to a clean cutting board and allow it to rest for five minutes before slicing and serving.

Shrimp and Veggies

1 box Rigatoni Pasta- Follow instructions on pasta for boiling
2 tbls Blended Oil 
12 ea   21-25 Shrimp – peeled, tail off, and deveined
3 tbls  Cajun Seasoning
¼ cup Cooking Oil
1 cup Sliced Cremini Mushrooms 
1 tsp Crushed Red Pepper 
1 tbls Chopped Garlic 
32 ea grape or cherry tomatoes halves
3 oz White Wine
Alfredo Sauce 
¼ cup Parmesan Cheese (optional)
1 tbsp Parmesan Cheese
Parsley

Cook pasta according to package. 

While pasta is cooking, toss shrimp with 2 tbls of blended oil and Cajun seasoning in a bowl. Set aside.

Heat a large sauté pan over medium-low. Once hot, add cooking oil and swirl the oil to coat the skillet.

Add the mushrooms and spread evenly over the pan.

Allow the mushrooms to sear on one side.

Add the seasoning shrimp and sear on 1 side for 2 mins. 

Move the mushrooms and shrimp around. Add the crushed red pepper flakes and garlic. 

Cook for 3 mins, moving everything around. 

Add the tomatoes. Cook for 2 minutes. 

Add the white wine and scrape the bottom of the pan.

Add the cooked hot pasta and your favorite pasta sauce.

Completely coat the pasta noodles with the sauce.

Turn heat off and fold in ¼ cup of parmesan cheese (optional).

Plate the pasta, each bowl getting 3 shrimp and a sliced chicken breast on top.

Garnish with fresh grated parmesan cheese and Parsley.
