Kale Quinoa Salad
Kent Hutchison from Bubba's 33 shows you how to make a fun summer salad. His restaurant is located in Mesquite on LBJ and Town Centre.
Kale Quinoa Salad
1 1/12 cup baby kale
3/4 cup baby arugula
1/4 cup cooked quinoa
beets - sliced or wedges - 4 pieces
3TBS Vinaigrette (suggested balsamic vinaigrette)
Toppings:
grape tomatoes cut in half lengthwise - 3 each
sun-dried cranberries - 1 TBS
crumbled goat cheese - 1 TBS
candied nut (suggested pecans) - 1 TBS
Place all the salad mixture ingredients into a large mixing bowl. Mix until well combined. Place salad mixture into a large cold bowl for service. Sprinkle salad toppings over the top of salad mixture and serve.
