Cauliflower Steak
2 Large Heads Cauliflower, Split down the Center
1 Cup White Wine
3 Tbsp. Olive Oil
Salt & Pepper
Preheat oven to 325 degrees. Place the cauliflower in a shallow baking dish with the white wine. Pour the butter over the cauliflower & season with salt & Pepper. Cover with foil & bake at 325 degrees for 1&1/2 hours or until soft & translucent. Remove & let cool.
Golden Raisin Brown Butter
2 Shallots, Minced
1 Cup Golden raisins
1 tbsp. chopped Garlic
1/2 Cup white wine
1 tsp chili flakes
1 tsp Lemon Juice
4 tbsp. Butter
Salt & Pepper
In a sauté pan gently melt 2 tbsp. butter with the shallots, garlic, raisins & Chili flakes. Cook for 1 minute. Turn up the heat & cook for 30 more seconds. Deglaze with white wine & lemon juice. Add the remaining 2 tbsp. butter & cook until butter separates & the fats brown. Pour the brown butter over the cauliflower "steaks" & garnish with a salad of your choice.
