Shrimp and Grits Beignets

1 beaten egg

1/2 cup buttermilk

1 cup grits

1/4 cup all-purpose flour

2 teaspoons sugar

3/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup shrimp, chopped

1 Tablespoon red bell pepper, diced

1 Tablespoon red onion, diced

1 teaspoon parsely, chopped

1 clove garlic, minced


Directions

In a bowl stir together the egg and buttermilk. In another bowl combine the grits, flour, sugar, baking powder, baking soda, and 1/4 teaspoon sea salt. Add the egg mixture to the grits mixture. Fold in shrimp, bell pepper, red onion, garlic and parsley. Stir just until moist. Let sit in refrigerator overnight to soften grits.

Heat the oil to 325 degrees F. Drop the batter by tablespoons into the fryer. Fry about 3 minutes or until golden brown, turning once.
