Breakfast Sandwich Recipe
*makes 4 sandwiches*
Ingredients:
- 4–4 oz chicken sausage patties
- 4 brioche buns
- 2 oz basil pesto aioli
- 8 slices fresh mozzarella
- 1 ripe avocado, cored and sliced thin
- 4 crispy fried eggs
- 8 slices fresh mozzarella
- ½ cup arugula

Directions:
1. On a flat top or in a saute pan. Heat to medium high heat and sear the chicken sausage until crispy for about 4 minutes each side.
2. Once chicken pattie is flipped over add 2 slices of mozzarella cheese to each patty
3. While chicken is cooking toast both sizes of your brioche bun.
4. Spread ½ oz of basil pesto aioli on each side of the bun.
5. Place 4 slices of avocado on the bottom bun. Add chicken pattie with melted mozzarella on top of the avocado. Then add your fried egg on top of the avocado.
6. On the top top bun add arugula on top of the basil pesto aioli.
7. Swerve slightly open faced with the full fried egg showing and the top bun slightly opened behind the bottom.
Breakfast Potatoes Recipe
Ingredients:
- 1# Yukon gold potatoes,
- 1 Red bell pepper, large dice
- 1 Green bell pepper, large dice
- 1 medium Yellow onion, large dice
- 1 tbsp Garlic, minced
- 1 tbsp Herbs, equal parts parsley and basil chopped
- 1 tbsp Parmesan cheese, grated
Directions:
1. In an 8 qt stock pot starting with cold water and 1 tbsp of salt bring potatoes to a boil until fork tender.
2. Strain the water from the potatoes and let them cool.
3. While potatoes are cooling, heat a medium saute pan to medium high heat.
4. Add 2 tbsp of cooking oil. Saute onions for about 3 minutes until translucent.
5. Add in both green and red bell bell peppers and saute for another 3 minutes until tender.
6. Add in garlic and continue to saute for another minute.
7. In a 350 degree deep fryer, fry the potatoes until crispy for about 3 and half minutes.
8. Remove from the fryer and allow excess oil to drain.
9. In a large mixing bowl. Toss peppers, onions and garlic with potatoes and season with salt and pepper.
10. To plate garnish with herbs and parmesan cheese and serve alongside the Radici breakfast sandwich.
