West Coast Chicken Burger

Chef Jason Gramon, the owner of B. Frank and Relish, stops by Good Day to cook the West Coast Chicken Burger. It's served with charred broccoli and shallots.


West Coast Chicken Burger

2 lb. Skinless Chicken Breast (or 2 lb. ground chicken)
1 Yellow or Sweet Onion
Olive Oil
6 T Fresh Thyme
6 T Fresh Rosemary
2 T Smoked Salt
1 lb. Yellow Cheddar (mild or sharp to your preference)
4 oz. Grated Parmesan
2 c Arugula
1 lb. Broccoli Crowns
1 Shallot
6 - Brioche Bun (Egg based bun) or choose your favorite bun.

Prep Chicken Patty:
If using chicken breast you will want to clean any tendons or undesirable parts off. You will first cut into small cubes and then chop in order to mince meat. (If you bought ground chicken you will ignore this step).

Combine in a mixing bowl: 2 lb. Minced Chicken, 1 TBL Minced Onion, 1 Tsp Fresh Thyme chopped and 1 Tsp Fresh Rosemary chopped.

Mix to form 6-7 oz Patties. Spray a plate with Olive oil or rub plate so patties will not stick to plate. Set on plate and refrigerate until ready to cook.

Cook W.C. Chicken Burger:
Preferably on your Grill cook patty to 165 degrees. Add Cheese to finish.

Alternatively; for an easy cook night this recipe works well inside. Using a cast Iron Skillet (preferable) on High Heat add 1 TBL Olive Oil coat pan. Wait 30 seconds to allow to get hot. Sprinkle Patty with a pinch of Smoked Salt add to Skillet (or grill), Salt side down. Sprinkle top with a pinch of Smoked Salt.
Cook for 3 mins. Then Flip. Cover Pan with lid or second pan upside down to allow steam cook and cook additional 3 mins. Flip and add shredded cheese. Cover and cook an additional 2 mins. Cook to an internal Temp of 165 degrees

Bun:
Toast bun in toaster oven, on grill or skillet brushing both sides of bun with Olive Oil or Butter to ensure a slight crisp.

Cook Charred Broccoli and Shallots:
Using a cast Iron Skillet (preferable) on High Heat add 1 TBL Olive Oil coat pan. Wait 30 seconds to allow to get hot. Add sliced Shallot and Broccoli Crowns. Cook on high adding another TBL Olive Oil in cook after a few minutes. Turn Broccoli Crowns as needed. Cook 4-5 mins. After 4-5 mins add 2 TBL water to provide steam to cook. Cook an additional 1 min till water evaporates. Serve on Plate and sprinkle grated Parmesan on top of broccoli.

Plating:
Place Chicken Patty on bun. Add any desirable condiments, BBQ sauce works best but its your choice, this burger works best with simplicity. Add a pinch of Arugula. Serve with any choice of Veggie side or French Fries, in this case we provided our recipe for our popular Charred Broccoli and Shallots. Enjoy.
