Food Network's Chef Preston Paine makes ricotta gnocchi

You may know him from Dallas' Shug's Bagels, but he's now the executive chef at a fine dining restaurant in Fort Worth. Chef Preston Paine is in the Good Day kitchen making a simple dish.

Here's how to make the Good Day Ricotta Gnocchi:

Ingredients:

  • 1# Ricotta
  • 1 cup Sifted AP Flour
  • 1 cup Finely Grated Parm
  • 1 egg
  • 15g Salt

Instructions:

  • Mix all except flour until incorporated
  • Slowly sift in flour and mix until incorporated (do not over mix)
  • Dust with flour, roll into 1" thick ropes, cut into 1" pieces
