Hawaiian Shrimp Poke from TJ's Seafood Market
Poke Marinade
½ tsp.Soy Sauce
½ tsp. Sambol
1 ½ tsp. Rice Wine Vinegar
4 tsp.Sesame Oil
Poke
6 Shrimp, cocktail, medium dice
1 oz. Cucumber, medium dice, no seeds
2 oz. Pineapple, roasted until just starting to char
Poke Marinade all
5 Macadamia nuts
1 tsp. Sesame seeds, toasted
14 Plantain chips
2 Bibb large leaves
1. Toss shrimp, cucumber, pineapple, sesame seeds in the marinade.
2. In a well bowl place two large leaves of Bibb extending beyond the edge of the well. Pile marinated poke in center of bowl as tall as possible.
3. Garnish with plantain chips stuck around the edge, macadamia nuts.
