Perfect chilly weather meal: Brisket chili recipe

Chilly temps mean chili season! Kyle St. Clair from One90 Smoked Meats joins Good Day to show viewers how to make brisket chili over mac and cheese.

Brisket ingredients:

  • 3 pounds of brisket
  • 1 can of Coke or Dr. Pepper
  • 1 medium onion
  • 1 bell or poblano pepper

Directions:

1. Start sautee' onions and peppers in som buttoer or oil. 

2. Add meat and stir, add water and soda, simmer until meat is hot and shreds with a whisk.

Note: Water will simmer off

Chili ingredients:

  • 2 qt of water
  • 14oz can crushed tomato
  • 2oz Worcestershire
  • 2oz vinegar
  • 2oz ketchup
  • ½ cup creole mustard
  • 3T paprika
  • ½ cup chili powder
  • 2T garlic powder
  • 2T cumin
  • 1T cayenne
  • 1t honey
  • salt to taste
  • 1T pepper

Directions:

Add tomatoes, worcestshire, vinegar, ketchup and mustard to pot and cook with the meat.  

In a separate bowl, Mix water, chili powder, garlic powder, cumin, and cayenne in a mixing bowl until smooth, add to the pot and stir well.  

Add spices and water to the pot  

Add honey, pepper, and salt to taste  

Simmer for 15-20 mins, or until desired thickness is achieved.
