Mini Turkey Empanadas

2 lbs of Turkey
1 White Onion chopped
4 cloves of Garlic
1 cup of Chicken Stock
1 cup Dry Cranberries
1 lbs Havarti Cheese
2 Eggs
2 cups of Flour
.5 Tablespoon Cumin
2 oz Vegetable Oil

Clean either Turkey left over and dice small. Dice the onion and chop the garlic. In a sauté pan pour the oil and sauté onion for about 10 minutes over a medium flame, add the garlic and sauté for other 5 minutes, when everything is golden brown add the either turkey and chicken stock, cranberries, cumin, and season accordantly. Reduce the stock half the way and place it in a pan, cool down properly. Cut the Cheese in rectangle shapes and place it in a container. Brake the two eggs and separate the yolk from the whites, keep the yolks and add a little water , mix it well, keep it refrigerated.
Spread flour on your kitchen counter and place the Empanada dough individually one next to the other. Using a cooking brush, cover the edges of the Empanada dough with the egg mix, add a scoop of the turkey mix and place the cheese on top. Fold the dough over and seal it with a fork.  With the same brush using the egg mix, cover entire the finished Empanadas. Pre-heat the to 350 degrees and cook the empanadas for about 25-28 minutes, when they are golden brown, remove form oven and they are ready to be served.

 

 

Mini Loaded Potato Croquettes
2 lbs of Mashed Potatoes
1 bunch of Green Onions
8 oz of Cheddar Cheese
4 pieces of Bacon, chopped
4 eggs
1 cup of Flour
1 cup of Sour Cream
1 Jalapeño finely chopped
In a mixing bowl, place the mash potatoes, bacon, green onions, cheese, 1/2 cup of the flour and eggs. Mix it well and make small patties with your hands. Place all of this in a pan with non stick cooking spray. On the kitchen stove, use a flat cast iron skillet, over a medium to low flame, heat for about 10 minutes, making sure is hot enough to sear and cook the croquettes. Place oil in the bottom of the skillet and heat. Place the croquettes and cook for approximately 4 minutes on each side, make sure to continually moved and flip it the croquettes, until golden brown.
