Savor Patisserie Macaron
Saturday afternoon there will be a pop-up bakery outside NorthPark Center encouraging mental health conversations. It's called the Depressed Cake Shop. Bakeries and pastry chefs from across DFW will sell their treats with the proceeds benefiting mental illness programs.
Savor Patisserie Macaron
Shell:
1 cup powdered sugar
1 cup almond flour
4 egg whites
1/2 cup granulated sugar
Pinch of salt
Pour egg whites into bowl of stand mixer and turn on to low speed.
Measure granulated sugar and set aside. Measure almond flour and powdered sugar, and mix together with a pinch of salt.
When egg whites get foamy, turn up speed to medium, and gently pour in sugar. After about 2 minutes, when egg whites start getting opaque, turn up speed to high and mix until egg whites are smooth, thick, and shiny.
Pour dry mixture into egg whites and gently fold to combine. Once they are about 90% mixed, add color and/or flavors and continue mixing until a thick, smooth “lava” consistency forms.
Pour into piping bag and pipe circles onto parchment paper or mat.
Bake at 200 degrees for 5 minutes then rotate and bake for another 5 minutes. Turn up the heat to 300 degrees and bake for 8 minutes, then rotate and bake for another 8 minutes, or until shells are firm on their feet.
Filling:
1 stick of butter, softened
1 c. of powdered sugar
1 tsp. heavy whipping cream
1 tsp. vanilla or another flavor
Place softened stick of butter in bowl and beat on high with hand mixer until light and fluffy.
