King Cake 2 ways by Brenda Brown at Good Times Cajun Cafe

Baker's notes: This complete and final traditional recipe takes 3.5 hours to make -
If using a plastic baby baked in cake, please have guests carefully break their piece of cake before biting into the baby to prevent choking or dental damage. *****

DOUGH:
1/2 cup butter
16 oz sour cream
1/2cup sugar
1 teaspoon salt
2(1/4 oz)active dry yeast envelopes
1/2 cup warm water
1 Tbsp. sugar
2 eggs
6 cups flour

**Plastic baby** Or two pecan halves for safety

Filling:
1/2 c butter ( spread on rectangles)
1/2 cup sugar
1/8 teaspoon salt
2 teaspoon vanilla
1 Tbsp. cinnamon
1/2 cup brown sugar
Directions-
Step 1-Cook butter, sour cream, sugar and salt in a medium sauce pan over low heat , stir often, set aside to cool to 100-110 degrees.
Step2- in a glass measuring cup stir together yeast, 1/2 c warm water, 1 Tbsp. Sugar let mixture foam for 5 minutes
Step3- using a heavy duty mixer med speed-beat sour cream mixture , yeast mixture, eggs, and two cups of flour- decrease speed to low adding the remaining flouting slowly- until dough is soft
Step4- remove dough from mixer placing it on slightly flour covered surface
Knead well,this is key to making the best dough ( flatten dough using heals of hand fold, push away from you, turn dough repeat steps) until dough is elastic like .
Step 5 place dough in a well greased bowl making sure dough is oiled well, cover with towel let sit for one hour or until it doubles in size.
Step6- divide dough in half   Lightly flour surface, roll each portion in a rectangle, place 1/2 c  softened butter on each rolled out surface add filling mixture on top of softened butter- roll dough like a jelly roll bringing two portions together
To form an oval ring  moisten to seal seams - cover once again , this time , only 20 minutes, remove towel -
Step 7- Bake  at 375 degrees for 25 minutes- or until golden brown.
While cake is baking -
Step8- make the glaze and separate three cups to make yellow, purple and green -allow cake to cool then pour glaze alternating the colors until completely glazed
Step 9- add colored sugar to match the colored glaze
Step 10- enjoy eating the delicious traditional King Cake - "Let the Good Times roll".

Note:
I place the baby under the cake so be sure to tell your guests to look for the baby before eating the cake- whomever finds the baby is the King or Queen of the party and traditionally that person purchases the next King cake.


Easy King Cake

Prep time 15 min minutes bake time 20 minutes DOUGH 2-cans crescent rolls Lay triangles flat on a cookie sheet slightly overlapping each triangle forming a circle with point inward
FILLING:
4 oz cream cheese
1 Tbsp. Cinnamon
1/2 cup brown sugar
 1 teaspoon vanilla
3 Tbsp. Butter
1/2  cup chopped pecans
Mix all ingredients and stir well- place the filling in the middle of each crescent triangle forming a thin ring  of filling to form a large ring of filling as demonstrated ,Pull the points and the outside of crescent roll together  to form a closed ring. Bake at 350 degrees for 20 minutes After King cake cools add glaze and enjoy decorating using Alternating colors until cake is completely glazed.
Glaze
1-1/2 cup powdered sugar
3 Tbsp. Milk
1 Tbsp. Lemon juice
1 teaspoons vanilla
Divide  evenly 3 bowls
First bowl -Add 2 drops of yellow food coloring to 1 bowl of frosting stirring well.
Second bowl - add 2 drops green food coloring stirring well.
Third bowl- add both 2 drops of red food coloring and 2 drops of blue food coloring making purple glaze stirring well. Decorate King cake alternating each color sprinkle matching colored sugar on top of matching glaze.

A small plastic baby is traditionally hidden in the cake before baking. This not recommended as it may cause choking or dental damage.
