Pie Tap Pizza Workshop + Bar showed off a different way to transform your Thanksgiving leftovers.  All you have to do is substitute the chicken for turkey.

 
Chicken Pesto Melt Sandwich
1 Bread Puff or Regular Sandwich Bread
2 tbsp pesto mayo
Rotisserie Chicken
2 strips of bacon
1 slice fontina cheese
1/4 Slice of a Beefsteak or Large Tomato
2 tbsp Avocado Spread   
2 Little Gem Leaves

PROCEDURE:
1. Heat the Rotisserie Chicken portion in the oven for 1 minute at 450º.
2. Top the Chicken Breast with Bacon and Fontina. Place back into the oven for 1 minute.
3.Slice a Bread Puff in half and toast in the pizza oven for 2 minutes.
4. Evenly spread the Pesto Mayonnaise onto both halves of the toasted Bread Puff.
5. On the bottom half of the Puff place the heated Chicken and top with Avocado Spread and Lettuce.
6. Place the top half of the Puff on the sandwich and hold in place with 2 sandwich picks.
7. Cut the sandwich in half and serve on a board with choice of side.

Avocado Spread - Clean 3 Avocados and rough smash in a stainless steel bowl. Add 2 teaspoons of Lime Juice and a 1/2 teaspoon of Sea Salt and gently mix together.
